Food Service Head Cook - Ponchatoula Community Care Center (Food Services)
· Prepares meals according to planned menus and standardized recipes in a sanitary manner to ensure quality with minimum waste.
· Reviews food menus and work orders to determine the type and quantities of food to be prepared and to identify all foods required for therapeutic diets before preparation.
· Preps, measures and mixes ingredients according to recipes.
· Assists driver with preparation of meals and loading and unloading of items for delivery.
· Portions and arrange food and distribute to waitstaff to be served.
· Follows proper plate presentation and garnish set up for all dishes.
· Labels and dates all food items in accordance with food storage chart.
· Receives, checks-in, dates and stocks deliveries in appropriate areas.
· Ensure food products are cooked and served in compliance with State of Louisiana Department of Health sanitation standards.
· Performs the necessary duties for emergency drills and situations such as fire, fire alarms, hurricanes, and other possible emergencies as outlined in the Disaster Response Playbook.
· Interacts with residents/clients and co-workers with patience, understanding and kindness in accordance with the CommCare Corporation mission and core values.
